A quick workaround way might be to tweak the setup to your likings with
the tool 'arandr'. Then from within arandr you can save that setup into
a script that you can execute for example via hotkey (e.g. AltGr + F12),
or a button on the desktop.
Whenever your screens get jumbled you just have to hit that hotkey, all
well again.
