Using xfwm4 as a standalone wm

For menus and backdrop you'll want xfdesktop.  For a taskbar use xftaskbar4. 
xfce4-panel is a panel/launcher, but I gather you don't want that bit.

I'm not sure what you mean by "dock applications", sorry.
