How do I reset "open with"?

AFAIK xfce4+Thunar does NOT store a separate list beside the Linux 
standard MIME database. MIME-Files are stored in 
$XDG_DATA_DIRS/applications.

The "Open With" Menu is shown, when more than 3 applications are 
connected via MIME-Database.

Set the default application with xfce4-mime-settings (Xfce4-Settings 
Manager -> Mime Type Editor).

For the other entries:
You can show the MIME-Type in Thunar with "View" -> "Configure Columns" 
-> "Mime Type", but MIME-Types are quite complex - they have aliases and 
subclasses. (see $XDG_DATA_DIRS/mime/, especially 
/usr/share/mime/packages/freedesktop.org.xml (e.g. application/rdf+xml 
-> application/xml -> text/plain)
(there are some freedesktop.org-specifications for that. )

For me, often the "text/plain"-connections in 
~/.local/share/applications go crazy, and these are also shown for 
RDF-Files....


Sorry, not that easy.

Fast solution is indeed: "rm -rf ~/.local/share/applications"
