You can build *buntu dummy packages by using equivs.

The Debian howto is still ok and does work for *buntu too.

A rough description of gvfs: It does allow you to mount devices by
Thunar and does provide Trash. For Thunar it shouldn't be a hard
dependency, but some GNOME software made it a hard dependencies, while
it usually even isn't needed for this software, so replacing it by a
dummy package could solve issues.

gvfs isn't good software, but for sure some trolls will make a flame out
of this too. gvfs definitively does cause issues, not necessarily the
issue the OP experiences.
