Two other ways are (was writing this):

Assuming that Adobe Acrobat Reader's desktop is called acroread.desktop 
(I don't have it installed here so check /usr/share/applications for 
that) you would use

xdg-mime default acroread.desktop application/pdf


In xfce 4.10 there's a GUI to change these things (MIME Type Editor).
