Gobal settings are in 
/usr/share/applications/defaults.list and
/usr/share/applications/mimeapps.list
Personal settings in
~/.local/share/applications/defaults.list and
~/.local/share/applications/mimeapps.list

You mean M$ Office. OpenOffice can do very well without Crossover. ;)

You should be able to do it graphically in Thunar: Right click on a
*.doc -> Properties -> Open with... -> Select Abiword.
