customizing menu

The wiki page is http://wiki.xfce.org/howto/customize-menu

I do not understand what is meant by $prefix in the paths shown on the 
page.  For example

$prefix/etc/xdg/menus/xfce-applications.menu and |$prefix/share/applications/xfce4-about-xfce.desktop

Can anyone enlighten me?

Are there any plans to simplify the procedure for amending the menu?
