Is this a general question, or just for 4.4 users?
Anyway, some ideas:

I remove the taskbar plugin - prefer to use the actual xftaskbar. The
tray plugin too (in Ubuntu Hoary it didn't worl anyway). The
mailwatcher goes too... Also the filemanager, but in 4.4 things are
bound to change :)

I leave mostly launchers in the menu, and the volume control + weather
plugin + netload plugin + cpu plugin + xfcalendar.

I tend to move a lot around.

Don't remember that well, but the volume control plugin should be in
by default if it isn't (I have my current setup for quite a while, and
I'm not sure if it wasn't there).
