Yeap.

Basically, with fetchmail, you retrieve the mails from your provider
account and store them locally in your mailbox. Then you configure
evolution to get the mails from here (but don't ask how to di that with
evolution, I have no clue)

This is application specific. What happens is that the keyboard event is
first caught by the window manager that checks if it's one of its key
bindings. If it is, then the window manager takes proper actions,
otherwise, the event is resent to the application.

All this to explain that, by removing the keybinding from xfwm, it will
be passed on to the application. Then the application can or cannot
handle it, it depends on the application and the window
manager/application can't do anything about that.
