App panel tab name control?

I am using F41 with Xfce 4.18.  Just migrated to it from F38.

The some of the names on the panel tabs are strange.

Like Terminal is Xfce4-terminal.
And Firefox is Org.mozilla.firefox.
And Thunderbird is strange changing the tab; sometimes meaningful and 
sometimes Net.thunderbird.Thunder...

Where might this be controlled?  I can find this in the tweaks or 
anywhere else.

also...

When I launch a new instance of Mousepad, it ends up as a tab in an open 
Mousepad, rather than a new window.  Again, I can't find where to alter 
this behavior.
