Getting 7 to GUI?

You did not tell us about your hardware:
- CPU?
- RAM amount?
- Hard drives?


If few RAM && slow disks (IDE 5400 rpms), you're likely to get more slow 
on a recent software pack such as CentOS 7.

I would recommend staying with CentOS6, install XFCE and fire all unused 
GNome components.
