I use root-tail[1] currently, there exists also conky[2].

Example:
  root-tail -id 0x1a00003 --geometry 1440x1024 --fork /var/log/daemon.log

The id was retrieved with xwininfo and a click on the desktop.

Conky is a lot more fancier than root-tail.
