Because "-- " is the signature delimiter and how would you think a 
parser could guess it is not?

In theory, a signature has not to be quoted, so at the first occurence 
of a "-- ", all the following wont be quoted.

My solution for you is to use non-digest delivery mode. IMHO, that 
delivery mode is not designed to be used for "discussion" but just for 
archiving.
