(http://www.xfce.org/documentation/docs-4.2), but who has time to
look? ^_^

I'm not sure what you mean by "docker" but most of the user-specific
config entries are in ~/.config/xfce4.  If they don't exist there
(e.g. when a user first logs in to Xfce), the global files are stored
in /etc/xdg/xfce4.

As for the menu, the system one is automatically generated on-the-fly
from .desktop files in /usr/share/applications, and the desktop menu
is stored in ~/.config/xfce4/desktop/menu.xml.  You can edit the
latter with xfce4-menueditor.
