how would i change icons shown in the taskbar and the pager?

you can't.  .  iit's up to the application to provide an icon, the icon 
you're seeing is the default that is substituted when the app doesn't 
provide an icon.  changing this icon probably requires messing with 
libxfcegui4 at least, and recompiling.
