That menu is ~/.xfce4/menu.xml (or, if you haven't copied it yet,
/etc/xfce4/menu.xml).  You can manually do it, but I'm thinking you
might want to try out menumaker:

http://menumaker.sourceforge.net/

It can create a big right-click menu for you pretty easily (just run:
mmaker XFce4)
