In detailed view, you can apply the same sorting when clicking on the head of
the column you want to sort for. Click twice for inverted sort.

The options in icon/compact view are more limited than in detailed view. 
In detailed view IMO arrangement only makes sense for the columns which are
available. 

However yes, I agree that it would be more consistant to have "arrange items"
on all views, possibly with a variable list of arrangement options, in order to
fit for detailed view.
