Found some people complaining about this issue:

That thread lead me to:
https://gitlab.gnome.org/GNOME/gtk/issues/1371

And indeed, changing the cursor size is a workaround and now it makes sense
because:
- At work and home my machines are already on gtk 3.24 (Arch Linux)
- However at work I have a script that "adjusts" the cursor size on start up
- Alex couldn't reproduce this bug because (I'm 99% sure) he's still on gtk
3.22

So I'm closing this bug because it's an upstream issue.
